How to
- 1Chill the glass in the freezer (or with ice water while you stir).
- 2Stir gin and vermouth with plenty of ice for 30 seconds.
- 3Strain into the frozen glass.
- 4Express the lemon twist over the surface, wipe the rim, drop it in.
Remy's tip
A martini is a thermometer with gin in it: if it is not painfully cold, start again. Stir 30 seconds minimum — counting fast does not make it colder.
