How to

  1. 1Chill the glass in the freezer (or with ice water while you stir).
  2. 2Stir gin and vermouth with plenty of ice for 30 seconds.
  3. 3Strain into the frozen glass.
  4. 4Express the lemon twist over the surface, wipe the rim, drop it in.

Remy's tip

A martini is a thermometer with gin in it: if it is not painfully cold, start again. Stir 30 seconds minimum — counting fast does not make it colder.
