Vanilla Salty Almond Ice-cream

Salty almonds, super creamy ice cream. Simply delicous PROTIP: Serve with fresh cream and chcolate sprinkles!Take some crushed pecans or bug chunks. Delicous. Or make some marzipan and fold little pieces into the mixture.

    Mix egg yolks and sugar till the egg yolks mixture turns white.

    With the vanilla bean and in the insidesHeat the cream and condense to 83 degrees. Then cool down to around 55 degrees Celcius. Add a little of the cream to the egg yolks mixture and quickly mix in. Avoid cooking the eggs!!! Little by little mix this in and bring back to 83 degrees Celcius untill it thickens a little for another 5 minutes..

    Once you have the custard take it off the heat and add the salt, almond flavor, vanilla,

    Wait until your ice-cream mixture has cooled to around 15 degrees celcius. Depending on your ice cream machine this will yield the best result.

    Freeze around 3 hours before serving. Enjoy! Add cocoa nibs or pieces of chocolate :) I love roasted pistacio pieces.
