Lemon drawn tight over flint, with a grip that keeps the glass emptying itself — heerlijk. Five years have only sharpened Assyrtiko's blade; this is Santorini at full authority.
Flight 1 'Assyrtiko from Santorini'. Volcanic soils, bone-dry, salty, smoky minerality.
