Passion Fruit Panna Cotta

An Italian classic. Easy to make difficult to master. Make a day in advance. Decorate with passion fruit, chocolate ice cream, tuille, mango coulis etc.

    soak the gelatine in cold water for 5 minutes

    Mix milk, cream, sugar and bring to the boil. Take of the heat and mix in passion fruit and wish in the gelatine. Ensure is below 80 degrees celcius otherwise the gelatine does not work as effective.

    poor in shapes max an inch high. cover in plastic to avoud a skin. To geth out of th mold put for 1 minut in a hot water bath 60 degrees and then they will release easily.
