- Champagne (or good Crémant)60 ml

- 1Half-fill the flute with cold stout.
- 2Float the champagne on top over a bar spoon.
Remy's tip
Pour the stout first, then the champagne over a spoon so it floats. Or mix them rough and call it what Dublin calls it: a waste of champagne.
