Abrir en el laboratorio de mezclasPaso a paso
- 1Put a pan on the heat, add the sugar and caramelise it gently until golden brown (120–125 °C). Add the whiskey — it can flame up, that is fine, just be careful. Let the flames die down.
- 2Add the coffee, stir gently and give it 10 seconds on very low heat — do not let the coffee boil!
- 3Pour into a long glass mug to about 60–70 %. Float the double cream over the back of a spoon (make sure it is not too cold).
- 4Grate some nutmeg and mace over the top.
El consejo de Remy
Never let the coffee boil, and pour the cream over the back of a spoon so it floats — the caramelised sugar-and-whiskey base is what lifts this above every bar version.
