In a large bowl, combine flour and salt. Cut in butter until mixture resembles large crumbs. Add the water and stir in, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 1 - 4 hours or longer. Roll dough out to fit a 24 cm pie form. Place crust in the form. Press the dough evenly into the bottom and sides of the pie form. Put some baking paper at the bottom and use flour to work with the dough to aoid it sticking to everything. The sides are max 4 mm thick.

Preheat oven to 220 degrees Celcius. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, brown sugar, and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan. Fill with apples, soaked raisins and lemon zest, crumble the marsipan or make a flat bottom layer of marzipan, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. or use an egg to brush the top of the pie.

Bake 15 minutes in the preheated oven at 220. Reduce the temperature to 175 degrees Celcius. Continue baking for 35 to 45 minutes, until apples are soft. Go for bottom heat if your oven supports this for the last 15 minutes. Becare that the top is not too brown.
