Fig & Mascarpone Gelato — The Original

Cooked fig jam folded into mascarpone with lemon zest — this is the grown-up at the ice cream party. Cook the figs to jam thickness; that concentration is the whole trick.

Zubereitung

    Cook figs, water and sugar about 8 minutes until jam-thick, then blend and cool to ~40 °C.

    Add lemon juice and blend again. Gently fold in mascarpone, lemon zest and glycerine — do not over-mix.

  3. 3

    Freeze 24 hours flat in the Ninja pint.

  4. 4

    Process as Ice Cream and re-spin if needed.
