A favorite of a wonderful russian connection. This dessert puts a smile to your face :) as she did to mine. The vodka adds a beautiful russian touch. Go commando style use coffee vodka! Suggestions and variations add orange and or lemon peel to the recipe.Or go exotic and add coconut milk and a rhum or vodka reduction...

Add the egg yolks with the sugar and mix untill the mixture is almost white and thick. Add the sides of the vanilla been to the milk and cream mixture and bring close to the boil. Set aside and mix into the egg sugar mixture and add the inside of the vanilla bean. Filter this mixture through a fine sieve.

Scoop of the foam of the top. This can be more than expected discard this as it will bubble up in the oven. whip up gently

Once cooked take the tray out of the oven and leave to cool down. Cool in the fridge for at least 4 hours.
