- Simple syrup10 ml
- Mint (8 leaves)
- Champagne (or good Crémant)60 ml

- 2Pack with crushed ice, add bourbon, stir briefly.
- 3Top with champagne, crown with a mint bouquet.

Slap the mint, do not muddle it to paste — this julep is about perfume, and the bubbles carry it beautifully.
