  1. 1Gently press mint with syrup and lime in the shaker.
  2. 2Add rum and bitters, shake with ice.
  3. 3Double-strain into a coupe, top with champagne.

Aged rum is non-negotiable — the vanilla and oak are what the champagne dresses up. A white-rum Old Cuban is just a confused mojito.
