Ingredients

  • Angostura bitters (1 tsp)5 ml
  • Sugar cube4 ml
  • Cognac25 ml
  • Champagne100 ml

How to

  1. 1Soak the sugar cube with the bitters on a bar spoon, drop it into the flute.
  2. 2Add the cognac.
  3. 3Scatter in the gold foil shards.
  4. 4Top slowly with champagne, garnish with a lemon swirl.

Remy's tip

Douse the cube ON the spoon, not in the glass — control, always control. And add the gold before the champagne so it dances up with the mousse.
