Ingredients
- Angostura bitters (1 tsp)5 ml
- Sugar cube4 ml
- Cognac25 ml
- Champagne100 ml
≈ 150 ml · 1.9 standard drinks

- 1Soak the sugar cube with the bitters on a bar spoon, drop it into the flute.
- 2Add the cognac.
- 3Scatter in the gold foil shards.
- 4Top slowly with champagne, garnish with a lemon swirl.
Remy's tip
Douse the cube ON the spoon, not in the glass — control, always control. And add the gold before the champagne so it dances up with the mousse.
