The Head Chef

Marco Piatti

Marco Piatti is the head chef at the FLAMEL restaurant in Lugano, where he creates modern, urban, and sustainable cuisine. His philosophy puts the product at the center, placing great value on seasonality, zero waste, and the use of fresh herbs from the restaurant's own rooftop garden.

Took over the position of head chef at FLAMEL in 2025, succeeding Andrea Barbano.

Successfully defended FLAMEL's rating of 14 Gault&Millau points.

Under his leadership, the restaurant holds a recommendation in the Michelin Guide (Bib Gourmand).

Appointed brand ambassador for the Swiss mineral water brand Valser in 2026.

Created the signature dish 'Plin Doppio' – an extra-large, meat-focused interpretation of the classic Piedmontese ravioli.
